I can’t wait to head to South America, starting in Mexico.  The flights are long, so to make the most of the journey, I reckon spend a few weeks there and get your money’s worth!

Alejandra’s Chimichurri Sauce

Ingredients:

1/2 cup extra virgin olive oil

1/2 cup chopped parsley (I’m lazy and just use a whole bunch)

3/4 teaspoon dried oregano or 3 tablespoons fresh

3 cloves garlic

2 red chillies

1/4 cup red wine vinegar

Season to taste with salt and pepper

 

Method

Simply blend in a bullet or food processor. Always check your seasoning and then serve or store with a lid on in the fridge.

 

Use on sexy steaks, grilled chicken, sweet potato or cauliflower or anything else that gets in your way.
