Tonight I interviewed the gorgeous and bubbly Alejandra from Big Latin Flavours.  We met last year while working on stage at the Ekka Food and Wine Cooking School and us foodies hit it off immediately.

 

Alejandra was willing to share the elixir, the secret sauce, the miracle cure for immdiately getting a South American taste in less than five minutes.  Her quick and easy and sublime Venezuelan Chimichurri Sauce can be added to grilled chicken, meat or vegetables for an INSTANT South American flavour.  Make your tonight and you can use it for the next five days!

I can’t wait to head to South America, starting in Mexico.  The flights are long, so to make the most of the journey, I reckon spend a few weeks there and get your money’s worth!

Alejandra’s Chimichurri Sauce

Ingredients:

1/2 cup extra virgin olive oil

1/2 cup chopped parsley (I’m lazy and just use a whole bunch)

3/4 teaspoon dried oregano or 3 tablespoons fresh

3 cloves garlic

2 red chillies

1/4 cup red wine vinegar

Season to taste with salt and pepper

 

Method

Simply blend in a bullet or food processor. Always check your seasoning and then serve or store with a lid on in the fridge.

 

Use on sexy steaks, grilled chicken, sweet potato or cauliflower or anything else that gets in your way.
