Keto carrot cake was my recipe of choice today!
Delicious! I’ll be skinny in no time at this rate lol!
 
1 cup butter
1 cup stevia
1 cup coconut flour
1 cup grated carrot
1 teaspoon cinnamon powder
1 cup almond meal
1 cup blended macadamia and or cashew
4 eggs
1 teaspoon vanilla
2 teaspoons baking powder
 
Method
Best butter and stevia until light and fluffy, add the eggs and the remaining ingredients.
 
Bake at 170c for 25-30 minutes depending on depth of dish.
 
Remove from heat and allow to cool
 
Decorate with 250g cream cheese mixed with 1 tablespoon stevia and 1 teaspoon vanilla, mix till smooth.
