Personal Choc-Lava Cake in a Mug
Ingredients –
1 egg
1/2 teaspoon baking powder
2 tablespoons almond meal/plain flour
2 tablespoons coconut flour/plain flour
2 tablespoons cocoa powder
2 tablespoons vegetable oil or melted butter
2 tablespoons sweetener or 2 tablespoons sugar
2 tablespoons dark chocolate chips
4 tablespoons milk
1 pinch salt
1 teaspoon vanilla extract or paste
Method –
Mix all the ingredients together to make a thick batter.
Grease two coffee mugs and then divide the beautiful batter between them.
Cook one at a time in the microwave for 50 seconds until just done, but slightly gooey in the middle is best. You can cook both, or you can keep one in the freezer for later.
The chocolate buttons should melt and provide a decadent bit of oozy chocolate.
TIP – Eat one now, keep the one in the freezer for later.
